This almost doesn’t even qualify as a recipe. I mean really. It’s that easy, you guys. But I’m into easy when it comes to food sometimes. And by sometimes I mean 99.9% of the time. And I think you probably are, too, especially when ice cream is involved.
Can we talk for a minute about my #tallgirlproblems? Almost every day that I’ve been in my new gym (aka a normal gym since I took a rest from CrossFit), I have been approached by at least one dude asking me where I played volleyball and/or basketball in college. I don’t even get a “Hi, nice to meet you!” anymore. Nope, just straight to the point. Because that’s just how the male brain works. And then I have to break the news to them that I, in fact, did not play in college. And they look at me with a very puzzled and confused face. Sorry to disappoint, guys.
Tall girl problem number two: jeans. Ohhhh jeans. The struggle is real everyone. Not only is it a struggle to find jeans long enough, because God forbid any store actually carry Long IN THE STORE. But the waist to thigh ratio is pretty much impossible to perfect with CrossFit quads. IMPOSSIBLE. I saw Juli from PaleOMG post about a pair of Vigoss jeans she bought and recommended and a lot of people commented saying they loved them, too, so I ordered a pair yesterday and am praying that they fit. Mostly because I realized after I ordered them that you can only return them for store credit. Ugh. That rule should be illegal.
Have you guys seen all of the stories this week about dogs being adorable? Like the pitbull that saved the chihuahuas life and they are now inseparable? I died. I can’t handle things like that. I never used to peg myself as an emotional crier, but sometimes it happens. Especially with adorable dog stories. Ugh. I miss my puppy.

- 1 can full fat coconut milk
- 3 tbsp honey (or maple syrup)
- 1 tsp vanilla extract
- Combine all ingredients in a saucepan over medium heat, stirring until mixture comes to a low boil.
- Remove from heat and allow to cool, then place in refrigerator for at least 2 hours.
- Remove from refrigerator, pour into ice cream maker** and use as directed.
- **Add any additional mix-ins a few minutes into churning if you so desire (nut butter, chocolate chips, coconut, etc.)
