Cilantro Lime Chorizo Meatballs

My neighbor had a food truck at his graduation party last weekend. A full on food truck posted up in the back yard serving people. And not just any food truck. A TACO food truck. Run by a guy named Tony. Actually I’m sure his name wasn’t Tony. But we’ll go with that. Umm hello. BEST. IDEA. EVER. I’m calling it right now. That will be the new big thing for graduation parties. It was so awesome. And it was my inspiration for today’s recipe. I got a chorizo taco and it was the bomb.com. People still say that, right? Well I do. I don’t think I’ve ever even really had chorizo until last weekend. Wtf was I doing with my life? Clearly nothing important. But now I have found true meaning. Kidding. Kind of.

Last week I was at the grocery store with my mom when a lady stopped us in the isle and said “I bet you’re an athlete.” Typical day in the life of a 5-foot 12″ club member. #tallgirlproblems. It at least made me feel like I still look like I have some sort of athletic ability left in me. So that’s nice. I’ve basically come to accept the fact that I am going to full on suck at CrossFit. And that I might die at first. But I’m just telling myself not to care and that everyone has to start somewhere, right? Right.

On the first Monday of every month, my aunt and I make peanut butter and jelly sandwiches to put in brown bag lunches that her work makes for the homeless. And every time we make them they smell SO. DAMN. GOOD. Last night was no exception. White bread is the pure smell of my childhood. My gluten filled childhood. Ahh, those were the days. I also always make an extra sammy for a guy at my aunt’s work who loves them. Who I’ve never actually met. We have a special sammy bond. Last night I made him a real treat. A triple decker PB&J with…wait for it…chocolate chips. Yes. It was naughty. He will love it.

Quick Bachelorette rant. I’m pretty sure this is already the most boring season ever. But I will still watch it, obviously. It’s always more boring when the dudes go after the girl. Because dude drama is just weird. However, I have to say I felt a special connection to Michael G. I think that’s his name? Why? Because he is a fellow type 1 diabetic. Much love Michael G. Much love. Okay sorry I thought that was neat. I also missed the casting call in Columbus for next season last week. Damnit. I semi-jokingly tweeted that I was going to go and an alarming number of people told me I should really do it. One girl even told me she heard about it and I was the first person she thought of that should try out for it. Don’t know if that’s a good or bad thing…awkward.

Onto meat. In ball form. If you aren’t a spicy fan, you could sub ground beef/turkey/chicken for half of the chorizo. You could also make these into burgers if you so desire. But meatballs are cute. And easy for on-the-go snacking. Or a party. I think I might ask Tony if I can sell these puppies on the truck.

Cilantro Lime Chorizo Meatballs

  • Prep time:
  • Cook time:
  • Total time:
  • Yield: 3-4
  • Difficulty: easy
  • Recipe type: entree

Ingredients:

  • 1 lb chorizo
  • 1/4 cup fresh cilantro, finely chopped
  • 1/4 cup onion, chopped
  • juice of 1/2 a lime
  • salt & pepper to taste

Directions:

  1. Preheat oven to 425.
  2. Grease muffin pan with coconut oil.
  3. Remove chorizo from casing if necessary (just cut a line down the middle to break casing and squeeze out).
  4. Combine all ingredients and mix together until well incorporated (don’t be afraid to use your hands!)
  5. Roll into 12 equal balls, placing one in each of the muffin holes.
  6. Bake for 15-18 minutes or until fully cooked through.
  7. Snack away!

    You’re not going to suck at Crossfit you’re going to do great and you’re going to love it. I’m just going into my 6th week. And I’ve “drank the Kool-Aid” so to speak. I was extremely out of shape. I have a nine month at home. Lots of weight gain with this pregnancy and NO exercise so I started from square one. I go 5 days a week and missed last Friday and went through withdrawal. I’d be there 7 days a week if I could. You’ll love it. Keep us posted on what you think and how you’re doing!! Oh and making the little balls of meat ASAP.

      Thanks Leslie! You are so right. I have definitely “drank the Kool-Ade” already! Haha. Everyone is so encouraging and it’s such an awesome atmosphere. Even for the newbies like me!

    Taylor – we have a killer food truck here in Indy – the Caveman Food Truck. OMG a Paleo food truck! His food is deee-lish. Here’s a little video about it. If you’re ever in town look it up he’s out and about every day!
