Coconut Chicken Nuggets

I’m straight up lying to you in that title. I didn’t make chicken nuggets. I made turkey nuggets.  But no one knows what a turkey nugget is, so I figured chicken would catch more peoples attention. Did it work? Probably not. Cool.

So last night I played basketball at my high school’s open gym. My uncle is the coach there and sometimes alumni go back and play. Man, there’s nothing like running up and down a basketball court to let you know how out of shape you are. It’s a good thing I had some baller teammates because I’m pretty sure I missed 99.9% of the shots I took. And I take a lot of shots. Sorry guys.  Not to mention I can’t move today. So that’s good.

Have I mentioned I’m starting up CrossFit again next month? I did it for a couple months back in the fall, and now I’m starting up again with my cousin Teri and her husband Nick.  I’m SO SO SO excited but also scared at the same time.  Teri asked one of the owners if we were going to die when we signed up.  He laughed and told us we have nothing to worry about.  So in other words he didn’t say no. Promising.

So anyways, on to the turkey nugs. Last night we had no plans for dinner in the Taylor Made household, but we did have some ground turkey. I saw a recipe for some amazing looking cilantro chicken nuggets in, you guessed it, the PaleOMG cookbook, and have been wanting to experiment with some ever since.  I had pretty much none of the ingredients it called for so I decided to wing it and make my own version. And let me tell ya, they weren’t too shabby! So the next time you’re craving some lil nuggets, this is your recipe.

I realize this recipe would be a lot better if I had some sort of amazing dipping sauce to add to it. But I cheated and dipped mine in some leftover Zesty Tahini dressing that I swiped from the Whole Foods salad bar the other day. Once I attempt to recreate that delicious mixture I will be sure to share it with you so you can enjoy these nugs with it.  You will love me. In the mean time, put your big boy pants on and find your own dipping sauce. I promise it’s not that hard.

Coconut Chicken Nuggets

  • Total time:
  • Yield: 3-4
  • Difficulty: easy
  • Recipe type: entree

  • 1 lb ground turkey (or chicken)
  • 1 egg, beaten
  • 3 tbsp Coconut Aminos
  • 2-3 garlic cloves

  2. Form mixture into small balls and roll in coconut flour, lightly dusting them.
  3. Place balls in a skillet coated with coconut oil over medium heat.
  4. Press down on each with a spatula to flatten a bit (into more of a “nugget” form).
  5. Cook on one side until browned, then flip, and continue cooking until they are completely cooked through (about 5-10 minutes).

Haha. Good call on the title. Turkey nuggets sound equally good to me though!

They’re so cute! I hope you figure out how to recreate that tahini dressing. Sounds great for dipping.

Can you please explain coconut aminos to me? I can’t find them anywhere! Are there any substitutes?

It’s basically like a natural soy sauce! I buy mine at whole foods but you can also order it online!

I’m starting to look into more nut-free options for food since I appear to have an issue with them, and one of my kids may as well. I have chicken in the fridge now, so I might try these for dinner tonight (don’t feel like unthawing anything in the freezer for today).
